Hudson Valley Charcuterie produces seasonal, small-batch artisanal products made exclusively with Raven & Boar heritage, silvo-pastured pork and utilizing local fresh free range eggs, produce and herbs.
Our products can be found seasonally at the Hudson Farmers' Market and year-round at growNYC's Saturday Ft. Greene Park Greenmarket, as well as special events, pop-up locations and restaurant menus. HVC sausages are also available for purchase at retail stores in throughout the region.
All animals are USDA processed and are made available all year round.
Hudson Valley Charcuterie products are currently stored and distributed frozen.

WHAT MAKES OUR PRODUCT DIFFERENT
Raven & Boar is the only pig farm in Columbia County to have an existing Grazing Plan which is implemented in order to manage, sustain and enhance the land and animal's ecological balance.
We moved into our on-farm Harvest Kitchen in October of 2023 in order to produce on-farm, as a USDA inspected facility with capabilities to produce un-heat-treated ready-to-eat cured and smoked products, ready-to-eat and fresh/frozen products for our Hudson Valley Charcuterie value-added pork product line.
